Our Sunday cake today is fruity fresh, but still a bit chocolaty: the perfect mix! Raspberry Yogurette cake!

The honor for the raspberry yogurette cake is actually due to my mother. She has conjured that while Maike and I have a creative craft weekend in the country. But since we both ate up at least a third of the cake and I had sent the recipe by email before, I have no bad conscience to advertise it here as our creative fever Sunday cake. So, let’s go!

You need that

The ingredients are sufficient for a raspberry yogurette cake in a 26er or 28 springform.

For the ground

  • 3 eggs
  • 100 grams of sugar
  • 60 grams of flour
  • 1 packet of custard powder

For the cream

  • 500 grams of natural yoghurt
  • 200 grams of creme fraiche
  • 250 milliliters of cream
  • 1 packet of instant gelatine
  • 25 grams of sugar
  • 1 packet of vanilla sugar
  • 1 pack of Yogurette or similar chocolate
  • 500 grams (TK) raspberries

Raspberry Yogurette Cake – That’s how it’s done

Let’s start with the floor. For this you first have to preheat the oven to 200 degrees. Then just beat the eggs with the sugar until frothy. Then fold in flour and custard powder. If you do not have pudding powder, you can replace it with a little more flour or simply bake a normal sponge cake. Spread the mass evenly in a greased mold and then put it in the oven for 10-15 minutes. But watch out that the floor is not too dark.

While the ground is cooling you can prepare the yoghurt mass. All you have to do is mix yoghurt and creme fraiche with the sugar and vanilla sugar. Then prepare the gelatine according to the instructions on the package and distribute them in bulk. If you do not have instant gelatin, you can also use four to five regular gelatin leaves. Now just beat the cream stiff and fold in, cut the yogurette into pieces and fold in with the raspberries. With it on the sponge cake, around which you best places a cake ring. Or you just use the Springform. Put the raspberry yogurette cake in the fridge for a few hours so that it becomes firm and then let it taste!
