A few leftovers of cocktails, a few remnants of the beauty mask – and then came out this delicious raspberry lime cheesecake! I’ll tell you how it happened and of course the recipe!

Raspberry lime cheesecake and a sweet 16 girl party

If you are looking for a funny gift idea for a friend, I can highly recommend you a Sweet 16 Party. When we had the idea, our chat exploded with great ideas for the day: photos of the past, tattoo necklaces, lava lamps, hair crepes, baking muffins and Fanta Reds – we had a thousand ideas. And that’s exactly what we bought then. And during all the chatter on the day, we then skipped a few program points smoothly: The raw food sticks, beauty masks and the cocktails! But it does not matter, because from quark and limes I conjured up the raspberry lime cheesecake the next day. Here comes the recipe!

That’s what you need – raspberry lime cheesecake

The amount is sufficient for a 20 cm springform

For the short crust pastry

  • 150 grams of flour
  • 75 grams of butter
  • 1 egg
  • 30 grams of sugar
  • A small pinch of salt

For the cheesecake mass

  • 250 grams of cottage cheese
  • 200 grams of creme fraiche
  • 2 eggs
  • 60 grams of sugar
  • 1 lime
  • 1 handful of raspberries

Raspberry lime cheesecake – that’s how it’s done

Be the first to prepare the shortcrust pastry. Simply knead all ingredients into a dough, shape into a ball and wrap in cling film. Put the dough in the fridge for about 30 minutes.

Grease your shape and heat the oven to 160 degrees. Roll out the dough on flour and then line the shape to the top.

For the cheesecakes, mix with cottage cheese and creme fraiche. Separate the eggs, beat the egg whites into egg whites and stir the yolks under the quark. The quark mixture also contains the sugar and the juice of the lime. Finally, lower the raspberries and the egg whites. Put the mass in your mold and let it soak in the oven for about 45 minutes. Then you switch off the oven and let the cheesecake cool in the oven with the oven door closed.

Then you should cool it down for another hour or two and then you can enjoy it!
