I am really a passionate cook and have cooked all over the continents. But do you know that, at some point you know quite a few flavors and you are not really excited anymore when you go out for dinner? Things were very different when my father-in-law cooked my new favorite food for the first time. The taste was wonderfully new to me and the dish is so easy to boil! I asked him very carefully for the recipe, because I absolutely have to share it with you! You are only allowed to read the recipe if you promise to try it 😉!
Joa, looks like a normal curry at first, but the combination of the ingredients is really a blast (that’s good, Katharina, you all long ago understood that you cooked the dish five times in the last three weeks!)
You need (for four people as a starter):
- 2 packs of TK prawns (or fresh, if you’re vacationing in France)
- 6-8 medium sized tomatoes
- 2 onions (or a big one)
- 1 can of coconut milk
- a good shot of pastis
- olive oil
- curry powder
- Salt pepper
- fresh baguette to serve
That was it 🙂
Cut the tomatoes into eighths and finely dice the onions. Then fry the shrimp in olive oil until the water has evaporated (or you can help a little and scoop it off).
Take the shrimp out of the pan and set it aside. Then onions and tomatoes are sautéed in olive oil and braised for about 10 minutes.
Add the prawns again and the coconut milk and let it boil neatly hot, otherwise the pastis will not burn. Wait a minute: BURNING ?! Right, you give a good shot (I would say 50 ml, maybe it’s a bit more) pastis and light the whole thing without stirring. Let the whole thing flambé until the flame goes out by itself.
Finally, you can taste it with salt and pepper and add curry. My curry powder is very intense, it only needs half a teaspoon, otherwise maybe a whole.
That was really fast, right? I’m so curious if you like it as much as I do! And because the whole thing is so super simple, I will definitely cook it on holiday at the campsite.
