Mushroom broth with bacon dumplings

Finally a reason why I just love the fall! Sure, I have a birthday in autumn, that always makes him a little friendlier for me. But for me there is nothing better than a nice, warm soup! Today I cooked one of the many porcini mushrooms that we have already found and dried this year (what a great mushroom year!).

It is necessary for broth (for 4 persons):

  • 2 tablespoons of dried porcini mushrooms
  • 6 stalks of parsley and some parsley for garnish
  • 2 bay leaves
  • 1.2 liters of broth or vegetable stock
  • 350 g of fresh mushrooms
  • 2 tablespoons port or sherry
  • salt and pepper

Boil the mushrooms, parsley, bay leaves and stock together and simmer for about 20 minutes. Clean the mushrooms up to four pieces, mince them and add them to the broth. Let simmer for another 30 minutes. Strain and heat the broth. Season to taste with salt, pepper and the port.

One needs for the bacon dumplings:

  • 150 g white bread from the previous day
  • 100 g bacon, in small cubes
  • 1 small onion, also chopped small
  • a little butter
  • 2 tablespoons of finely chopped parsley
  • 1 egg
  • 125 ml of milk
  • 1 tbsp flour

The rolls or whatever you take cut small. Drain the bacon in a pan, then add some butter and sauté the onion cubes until they are nice brown. Add the bread with the parsley and salt and pepper. Whisk the milk with the egg and pour over the mixture. Knead with your hands to a dough, then sprinkle the flour over it. To prevent the dumplings from falling apart, let the dough rest for 30 minutes. Then knead again, make small dumplings and leave them either in separate broth or directly in the soup for about 10 minutes even let. Serve with a few slices of mushrooms and sprinkle with parsley.
