I ate vegan köfte for the first time in Cologne at Komagene – and found it so delicious that I experimented a bit at home. Here comes my variant with lentils and bulgur for you.
Vegan köfte from lentils and bulgur – glamping recipe
I love dishes that are simply served on a large plate and everyone can easily use them to their heart’s content. The vegan kitchens can be prepared for a glamping excursion already great. On the spot you only need a bit of vegetables to cook and ready to serve.
Ingredients – Vegan köfte from lentils and bulgur
Served with vegetables, iceberg lettuce and pita, the set is enough for about 4 people.
- 200 grams of red lentils
- 200 grams of bulgur
- 2 cans of chopped tomatoes (400 milliliters)
- 3 small onions
- 2 large garlic cloves
- 6 tablespoons tomato paste
- Paprika, cumin, chili, ground coriander seeds and salt
Here’s how it’s done – Vegan köfte made of lentils and bulgur
Wash and cook the lentils. Drain and drain well. Mix the bulgur with the tomatoes and let them swell, at least for 30 minutes. Finely chop the onions and sauté, squeeze the garlic. Put them under the bulgarian mass with the lentils and tomato paste. Stir in spices to taste and let the mass continue for a few more hours. It tastes best after a night in the fridge.
Form small balls and serve them with vegetable sticks, lemon, iceberg lettuce for wrapping or pita bread (there will be a recipe in our theme weeks tomorrow!). Super tasty are also hot sauces and pomegranate syrup.
Tip: If the mass does not get tight, just add a few tablespoons of couscous under it.
