Hot into the new year

So, now is the end of heavy, greasy food! I have unrestrainedly struck over Christmas (how surely each one of you) now craving Asian food because it tastes nice and fresh. For dinner yesterday there was a spicy glass noodle salad that tastes delicious even without meat (but I really like the combination of minced meat and shrimp).

Hot into the new year  Note the wonderful tea towel from Ferm living, that my brother-in-law and his brand new wife (brand new because only 1 week married) have given me for Christmas!

You need (for 2 people as a main course):

  • 200 g glass noodles (connoisseurs will have realized that in my salad are rice noodles, I had no other, but with glass noodles it tastes much better)
  • 2 spring onions
  • a handful of dried shitake mushrooms
  • 250 g minced meat
  • 1/2 cucumber
  • 1-2 tomatoes or cocktail tomatoes
  • 200 grams of shrimp
  • 1 lime
  • 1 bunch of coriander leaves
  • fish sauce
  • soy sauce
  • sesame oil
  • dried or fresh chili peppers

First pour boiling water over the shitake mushrooms and leave to soak. Then remove the stems and cook the mushrooms together with the mushroom stock, some soy sauce and sugar for about 10 minutes. Fry the minced meat in a frying pan in sesame oil, add some soy sauce. Then set the minced meat aside and fry the shrimp. Cover the glass noodles with boiling water and leave for 5 minutes, then drain. Chop tomatoes, spring onions, cucumber and coriander and add to the glass noodles. Add the shrimp, mushrooms and minced meat and season with a few spoons of fish sauce, lime juice and soy sauce. Tidy chilli on it, because he just tastes spicy!

Hot into the new year  That was my suggestion for a fresh, reasonably light meal. What are your recipes to get back into shape quickly?
