When I have guests to eat, it’s always the perfect excuse for me to finally make a dessert again. Usually we do not have one. And I absolutely do not know how it could happen, but lately I missed the opportunity and planned nothing as a visit. Shortly before, however, it still a lot to me and so I have ruckzuck from Windbeutelresten, fridge finds, some white chocolate and strawberries stirred together this dessert! And that was something of yummy! Here comes the recipe for you!
That’s what you need – cheesecake cream with strawberries and windbags
The amount is enough for about 6-8 small glasses – in the photo, however, you see a big one. Since dessert was so spontaneous, I was glad that I could still save a bit of the amount for the photo!
For the cheesecake cream
- 200 grams of cream cheese
- 200 grams of cottage cheese
- 100 grams of white chocolate
For the mini puffs
Of course you can also buy the mini puffs if you want to make it easier!
- 126 milliliters of water
- 60 grams of butter
- 1 pinch of salt
- 75 grams of flour
- 20 grams of cornstarch
- 2 to 3 small eggs
- Approximately 500 grams of strawberries
- Maybe some sugar and a splash of lemon juice

For the puffs, you’re the first to make a batter. In return you put the water together with the butter and the salt in a pot on the stove and boil it up. Add flour and starch all at once, as soon as the water boils. Stir well with a wooden spoon and stir until a lump forms from the dough and the bottom of the pot is thinly covered with a white layer. Then you stir an egg down quickly and let the dough cool down a bit. After about 5 minutes, you stir the second egg. If the dough is still very firm, you can stir in another egg. Sprinkle the puffs then with a piping bag on a greased and flour-dusted baking paper and bakes the puffs about 20 minutes at 210 degrees in a preheated oven.
Preparing and layering cheesecake cream
You just have to clean and slice the strawberries. I always do without extra sugar because strawberries are sweet enough. You can mix it with sugar and a dash of lemon if you want.
For the cheesecake cream you melt the chocolate and then stir it under the cream cheese and quark. Again, I do without additional sugar, because the white chocolate is sweet enough.
Then put everything in the glasses and make them for about 1 hour before serving cold.
